Aged black garlic (ABG) is an odorless garlic containing S-Allyl-Cysteine (SAC) as its most abundant, stable and biologically active compound.

ABG is a naturally fermented (aged) raw garlic under controlled conditions (high temperature and humidity). This process turns garlic clove dark, converts the harsh pungent flavour of raw garlic into sweet syrup flavour while giving chewy soft texture to the garlic. The ageing process also increases more stable and biologically active compounds, S-Allyl –Cysteine (SAC) along with other polyphenols which have several health benefits including antioxidant, anti-inflammatory, cardiovascular health, cholesterol lowering, anti-hyperlipidemia and immune boosting activity. 


S-Allyl –Cysteine (SAC)


SAC is produced during the natural fermentation of raw garlic and is one of the major compound responsible for several health benefits of aged black garlic. SAC is more stable than allicin and hence considered to be responsible for health benefits of black garlic. It is clinically proven to help with hypertension, unbalanced cholesterol, and/or high levels of triglycerides.

SAC is 30-fold less toxic than other typical garlic compounds such as allicin and diallyldisulfide indicating its higher safety profile.
